Food supplement E1001 is a salt and choline esters:

  • choline acetate or E1001 (I);
  • choline carbonate or E1001 (II);
  • choline chloride or E1001 (III);
  • choline citrate or E1001 (IV);
  • choline-bitrate or E1001 (V);
  • choline lactate or E1001 (VI).

As regards the organoleptic properties of salts and esters of choline, such substances are hygroscopic white or colorless crystals; it can also be a crystalline powder. May have a slight odor of trimethylamine.

Technological functions of the food additive E1001:

  • nutrients (that is, these substances are biologically significant and without them the normal functioning of the body is impossible);
  • dietary supplements.

Sources of salts and esters of choline in nature are tissues of animals and plants, microorganisms. As for the content of these substances in food, then most of them are rich in various types of meat, all kinds of fish, egg yolk, and in addition soy flour.

Until 2010, in the Russian Federation, the food additive E1001 was approved as an emulsifier, thickener, texturizer, consistency stabilizer and binding agent. Since 2010, the substance has been removed from the list of permitted additives, which are permissible to apply in the food industry. In general, in many countries of the world, choline salts and esters are also prohibited from being included in food. In addition, it should be noted that the addition of E1001 is also prohibited for use in the manufacture of products of cosmetic production, since it can cause irritation and allergic reactions when it is applied to the skin.

Although for some time the salts and esters of choline have ceased to be used for the enrichment of food, but still they have received their use in the pharmaceutical industry. They are components of drugs aimed at the treatment of certain liver diseases (hepatitis, cirrhosis). Choline chloride, for example, is used to treat atherosclerosis. Also widely used food additive E1001 in the production of animal feed.

Until 2010, the food additive E1001 was used in the formulation of mayonnaise, margarine, various sauces. She acted as an aid for the manufacture of fat emulsions or emulsions of water in fat. Also used E1001 for the production of a variety of cheeses. The substance was also used in the meat processing industry and in the production of frozen food. In addition, salts and esters of choline enriched flour and improved the quality of baking. Also, choline chloride, choline citrate and choline bit could be found in the list of baby food ingredients. Cholinite-citrate can also be found in sports nutrition.

Directly choline in the body plays a fairly significant role, and it is very important for the normal functioning of the body. For example, it is a neurotransmitter and is involved in the metabolism of fats. Another name for choline is vitamin B4. The daily rate of its receipt in the body is in the range of 0.5-4 g. With chronic deficiency of vitamin B4, fatty degeneration of the liver can occur and, as a result, its cirrhosis can develop.

As for choline salts, if they are consumed excessively, blood pressure may rise. A large consumption of holibitartrate can cause a lot of unpleasant consequences: diarrhea, nausea, excessive salivation, excessive sweating, and even depression can develop.

However, the food additive E1001, which is in food, does not benefit, but may be useful as a component of drugs in the treatment of certain diseases, which were discussed earlier.
