The scope of the food additive E201 is similar to the scope of sorbic acid. It includes the production of such products:

  • cheeses of various varieties;
  • margarine (ordinary and low-fat);
  • milk-based desserts;
  • all kinds of drinks (alcoholic and non-alcoholic);
  • various liquid concentrates;
  • liquid broths and soups (however, except those that are stored in cans);
  • sauces and syrups;
  • jam and jams;
  • jelly and marmalade;
  • canned vegetables and fruits;
  • dried egg products;
  • dried and salted fish;
  • all kinds of seasonings and spices, etc.

Thanks to sodium sorbate, the shelf life of the above listed foods is significantly increased.

The marginal rate of consumption of the food additive E201, in which the human body is not inflicted, whatever the harm, is in terms of sorbic acid 25 mg per kg of body weight. Increasing the maximum permissible rate may cause the development of allergic reactions: itching of the skin and its redness.

In general, this substance is completely broken down and absorbed by the body, like fatty acid, through β-oxidation.
