In winter, there is very little sun in our latitudes, but there is a lot of persimmon from Turkey, Spain, Azerbaijan and the Krasnodar Territory: fig persimmon, Baku candle, chocolate and even tomato persimmon.

Useful and juicy berries are ideal for salads, snacks and desserts.

Elena Moskalenko offers several recipes with persimmon — with notes of Caucasian cuisine, Italian accent and French charm.

Sweet Pepper Sandwich with Persimmon Dressing

What do you need:

  • 1 ripe persimmon
  • 3 sweet peppers — 2 green and 1 orange
  • 4 tbsp. cottage cheese stream cheese
  • 1 chili pepper
  • 2 cloves of garlic
  • 2 tbsp. lemon juice
  • on a pinch of salt and smoked paprika
  • bread and fresh tarragon for serving

What to do:
Peel green peppers from seeds and membranes and cut into 1 cm thick circles.

Lay on the slices of bread.

Orange pepper cut, remove seeds, membranes and grate on a medium grater.

Wash the persimmon, remove the dry inflorescence and bones.

Mash the flesh with a fork.

To mix persimmon, grated pepper, garlic, lemon juice, salt, add cottage cheese stream cheese, to stir thoroughly.

Fill the rings with pepper.

Sprinkle with smoked paprika, sprinkle with chopped chili.

Serve sandwiches, having decorated with sprigs of fresh tarhuna.

What do you need:

  • 1 ripe persimmon
  • 1 orange
  • 150g Mascarpone
  • 7-9 cookies
  • 3 tbsp. brown sugar
  • 1 tsp ground coffee

What to do:
Remove the zest from the orange, squeeze the juice and collect the pulp.

Persimmon wash, remove the tail and bones.

In a small Turk make coffee, add 1 tsp. sugar and a little orange zest, let it brew and cool.

Biscuit grind in a blender into a large crumb.

Persimmon, pulp, zest and orange juice, beat with mascarpone.

Add sugar and beat again.

Lay the dessert in glasses or creamer layers: a layer of mascarpone, a layer of biscuits — pour the coffee, again Mascarpone.

Decorate with crumbs cookies.

What do you need:

  • 1 big persimmon
  • 1 egg
  • 60 g butter
  • 5 tbsp. l brown sugar
  • 1.5 tsp. lemon peel
  • 10 art. l self-rising flour
  • soda, on the tip of a knife
  • a pair of thyme sprigs (to break off the leaves)
  • powdered sugar for serving

What to do:
Mix oil with thyme leaves and zest.

Add flour and grind to crumb.

Heat the oven to 200 degrees.

Persimmon wash, remove dry inflorescence and bones.

Persimmon pulp, beat egg and sugar into cream foam, add to dough. Mix.

Add soda and mix again until smooth.

Mass spread in molds Madeleine.

Bake cookies for 15 minutes.
