What you need (10-12 thin pancakes):

  • 120 grams of wheat flour
  • 200 ml whole milk
  • 50 ml of plain or sparkling water
  • 50 ml orange juice
  • 2 eggs room temperature
  • 1.5 tsp. Sahara
  • ½ orange peel, finely grated
  • pinch of fine salt
  • 1 tbsp. l refined vegetable oil in the dough,
  • plus extra oil for greasing the pan

Orange Caramel Sauce:

  • 100 g brown sugar
  • 1 orange juice
  • 1 lemon juice
  • 60 g butter
  • zest of 1 orange and 1 lemon, finely grated
  • 1 tsp orange liqueur
  • a pinch of salt
  • whipped cream, ice cream, almond petals — for serving

What to do:
Sift flour into a bowl.

Beat eggs lightly with sugar and salt, add zest, milk, water and orange juice (all liquids at room temperature), mix. Gradually add flour to the liquid portion, mixing the dough with a whisk until smooth.

Cover and leave for 1-2 hours.

During this time, the gluten of flour swells, homogeneous, without lumps, pancake dough will spread better in a pan, and pancakes will not tear and will be thinner and more elastic.

Before baking, pour vegetable oil into the dough and mix.

Bake the pancakes in a well heated and greased with vegetable oil using a cooking brush.

Fold the pancakes in a pile.

For the sauce, mix the sugar, butter, salt, orange and lemon juice.

Heat in a saucepan over low heat until sugar dissolves.

Slightly boil down the sauce, add the zest, hold on the fire for another 1-2 minutes.

Pour in the orange liqueur, mix and remove from heat.

Grease hot pancakes sauce, fold envelope and pour over the sauce.

Sprinkle lightly roasted almond petals and serve with a scoop of ice cream or whipped cream.
