There are two non grata products in my kitchen: industrial mayonnaise and margarine.
The bright image of margarine has almost completely erased from memory, but mayonnaise periodically penetrates into the refrigerator.
To do this, there are two special cases: herring under a fur coat and cookies in mayonnaise from my pioneering childhood.
The recipe of this cookie is a vivid example of Soviet recipes, when, in conditions of total deficit, something was mixed with something and something came out!
It is quite possible that in your shabby notebook with family recipes, the mayonnaise cookies were lost somewhere between «Alenka in a diaper«And salad»Mimosa«.
Of course, in the original recipe in the dough is not any butter, but margarine, and the amount of products is measured not in grams, but in jars and glasses. Instead of a boring baking powder, soda is used, which must be quenched in vinegar. As a child, it was my favorite moment in the whole process.
Call the children, along the way, explain to them some basics of chemical reactions.
For those who want complete authenticity and who have a faceted Mukhinsky glass in the kitchen, I quote the number of products as in the original. Who does not have a glass, hang in grams.
Well, you decide — butter or margarine.
What do you need:
- 250 g of mayonnaise
- 200 g butter or margarine
- 230 g (1 cup) of sugar
- 600 g (4 cups) flour
- 1 bag of vanilla sugar (8 g)
- 2 eggs
- 1/4 tsp soda
- lemon juice or vinegar
- a pinch of salt
What to do:
Heat the oven to 200 ° C.

Beat eggs slightly. Add mayonnaise and mix. Butter (or margarine) Grate and mix with eggs.
Add sugar, vanilla sugar and salt, mix with a mixer.
There is no need to break in mass homogeneity — rubbed oil will carefully prevent this.
Measure out the soda, put in a tablespoon and add a few drops of lemon juice or vinegar.
Soda will start to foam. Stir the soda with a knife tip to make sure it all reacts with the acid. Add soda to the oil-egg mixture and mix well.
Without ceasing to beat the mixture with a mixer at a slow speed, gradually sift the flour.
Get a pretty cool dough.
Slice the dough through a meat grinder to form cookies.
The dough with which you are currently not working, it is better to keep in the refrigerator.
We make the cookies as follows: slowly turn the dough in the meat grinder, when the length of the twisted dough is about 5-6 cm, separate it and put it on a baking sheet. Then separate the other half of the dough and also shift to a baking sheet, at a distance of 1.5-2 cm from each other.
In the same way scroll through the dough.
Try to make the cookies quite thin.
Otherwise, it may remain soft in the middle and will have a distinct mayonnaise flavor.
If suddenly you do not have a meat grinder, roll the dough into a layer about 4-5 mm thick and cut the biscuits into molds.
Option no less tasty, but less nostalgic.
Place a baking tray with cookies in a preheated oven and bake in the upper part for 18-20 minutes.
