And, finally, decided to buy a bottle kvatsarahi, who, as it turned out, is the cousin of tkemali.

Kvatsarahi is sauce from the concentrated juice of sour red plums, similar to tkemali, but thick.

The consistency is achieved by long boiling plums.

Kvatsarahi added when cooking in any dish of beans, they pour the meat and vegetable salads — for sourness.

If plum kvatsarahi — with pronounced sour, then barberry sauce — sweet.

It is added to meat dishes — sugar-tart notes emphasize the aroma of spices and contrast with the natural salty taste of meat.

The sauce is made from ripe barberry berries, which are very useful due to the high content of carotenoids and mineral salts.

And malic, citric, ascorbic and tartaric organic acids are involved in the acid-base balance of the whole organism, which means they retain youth.

Both sauces are very economical to use. So, for lobio of a kilogram of beans, you need only one tablespoon of kvatsarahi, and for roast meat for a large family you need two tablespoons of barberry sauce.

You can cook them yourself, but it is more profitable to buy.
