Honey Recipes — Mushrooms with Honey, Mutton in Honey Sauce, Fried Ricotta & Honey Ravioli

Somehow it happened that most people associate honey with sweets.

However, it goes well with meat, cheese and even mushrooms.

What do you need:
2 large mushrooms Eringi (king oyster mushrooms)
1 tbsp. l honey
2 tbsp. l soy sauce
1 tbsp. l rice wine (or dry sherry)
1-2 feathers of green onions
1 tsp sesame seed
1 tsp sesame oil

What to do:
Wipe the mushrooms with a damp cloth. Cut lengthwise into slices 1 cm thick and make shallow cuts on each side on both sides — crosswise. Chop green onions.

Prepare the marinade by mixing honey, soy sauce, rice wine and sesame oil.

Lay the slices of mushrooms in a cold frying pan in a single layer and pour the marinade.

Leave to marinate for at least 15 minutes, turning them over periodically.

Put the pan with mushrooms and marinade on a small fire and fry, often turning over until the sauce is caramelized and thickened.

When serving, sprinkle with sesame seeds and green onions.

What do you need:
350 g lamb (pulp with hind legs)
2 tbsp. l hoisin sauce
1 small cucumber
1 tsp sesame oil
1 tbsp. l vegetable oil
1-2 feathers of green onions
1 small chili pod
800 ml vegetable oil for deep-frying

For the sauce:
2-3 art. l honey
2-3 art. l chicken broth (or water)
1 tbsp. l rice wine (or dry sherry)
1 tbsp. l soy sauce
1 tbsp. l rice vinegar
2 cm ginger root
1 tbsp. l starch

What to do:
Peel the meat from all the veins and films, cut very thin slices across the fibers and marinate in Hoisin sauce for at least 30 minutes.

Green onions and chili pepper finely chopped.

Make a sauce.

Finely chop the ginger and mix with all the other ingredients for the sauce.

Cut cucumber into thin circles.

Heat the oil for frying to 150 ° C and quickly fry the pickled lamb in it, making sure that the slices of meat do not stick to each other.

After that, remove and set aside on a grate or a napkin, letting drain excess oil.

Heat a wok or a deep frying pan, pour in a tablespoon of vegetable oil and fry the lamb slices quickly, stirring constantly.

Add the sauce and, without ceasing to stir, fry a little more, not longer than a minute.

Then add cucumbers and, as soon as they are soft, pour in sesame oil, mix well and remove from heat.

Serve hot, lightly sprinkled with finely chopped green onions and chili.

What do you need:
200 g flour
20 g butter
100 g ricotta cheese (or other young homemade cheese)
2 yolks
3-4 Art. l liquid honey
5-6 Art. l olive oil
lemon peel
1 pinch of ground cinnamon
salt to taste

What to do:
Mix flour, butter and 1 tbsp. l olive oil, add a pinch of salt and some water.

Knead the dough thoroughly, it should not be very steep. Cover with foil and refrigerate for half an hour.

Then roll out very thinly and cut into squares with a side of about 3 cm.

Mix Ricotta with one yolk and finely chopped lemon zest.

Add 1 tbsp. l honey, a pinch of ground cinnamon and knead thoroughly.

Place a little filling in the center of the square Juice, smear the edges with the remaining loose yolk, cover with the second juicy and fasten carefully, trying to squeeze out excess air from the center.

Fry the resulting ravioli in a large amount of highly heated olive oil until golden brown.

Put on a paper towel, letting it drip off excess oil.

Serve hot ravioli, watering copiously with honey.
