Fig jam with Madeira cheese

In the last days before the holidays, Marina Pankova bought an elegant little thing for the New Year’s table: a fig jam with Madeira will be well served for dessert — to a cheese plate.

I do not know how anyone, but I haven’t been loading the New Year table for a long time with serious hot dishes. For example, a baked duck, which in my childhood was an essential attribute of a family holiday program.

Now the night menu in my house consists mainly of light cold snacks. Including cheeses.

This time I decided to revive the festive cheese plate with fig jam with Madeira.

Matter of course, conducted a preliminary tasting.

In fact, true gourmets recommend combining this jam with hard cheeses, for example, with English Cheddar and Lancashire. But in my fridge there was only solid «Dutch master«, On a thin piece of which I smeared jelly-like substance.

Like fresh figs, the jam turned out to be quite sweet, with a slightly noticeable spicy-resinous taste of Madeira.

Small seeds crunched merrily on the teeth.

Indeed, connoisseurs are right: a slightly sour tinge of savory «Dutch masters»Perfectly complemented the bright flavor bouquet of jam.

I hid the jar in the farthest corner of the kitchen cabinet — so that my family would not accidentally eat jam ahead of time, and not with cheese, but with tea.

As happened to me many years ago, when I myself first tried the jam for cheese.

It was in the early 90s, at a reception at the British Embassy. We, a group of young journalists from various Moscow editions, were invited to a kind of festive charity event.

The cultural program was intense, and the luxurious buffet table amazed our imagination, which was still very unsophisticated in those years. With exquisite miniature snacks on trays, the waiters moved silently around the room. But for cheese, located on a separate table, I had to go on my own.

My eyes fled — there were many cheeses, and very different, previously unseen by me.

In addition to cheeses, tiny white bowls and jars of jam stood on the snow-white tablecloth. Strange guys, I thought. “The tea has not yet been delivered, but the sweet has already been set.”

At this moment, a colleague from a friendly publication, the famous merry fellow Pasha, approached me.
— Hell, there’s nothing to profit, ”he said with a smile. — Well, if I don’t take home a piece of cheese in my bag, it will all fall apart!

And come on, Marinka, even if we are going to make a jam?
— What are you, what are you! — I was worried. — What if they are caught on the way out?

International conflict can turn out! Well, in general, somehow unsympathetic …
“C’mon,” and, with a wink at me, Pasha, with a deft movement of his hand, threw a jar of jam into our bags.
My heart fell into my heels — I didn’t want any tea, no coffee, no dessert … Just to get out safely.

Fortunately, the worst did not happen.

For several days I savored delicious fruit jam with tea at home.

And when she was about to wash an empty jar, she found on the label an inscription saying that the jam was meant for cheese.

Trifle, of course, but the sediment remained.

The name was not prepared for me. Therefore, they called me at random Marina, which, as it turned out later, means “sea”. Maybe that’s why I love to swim so much.

Only not in the sea, but on the blue path, in the pool. Be sure to open. If I do not swim a couple of kilometers a day, I break out like an old cupboard.

The “walruses” themselves floundered in the water at a temperature of 7 degrees, and I swam behind them, on a steamer, where I wrote a report about the tempering amateurs for the Nezavisimaya Gazeta.

In general, I always liked to watch how people know how to create a beautiful world around them.

For a long time I talked about this in my author’s headings in a magazine about design and interiors with the funny name “Stool”. I also love to eat tasty food, especially what someone else cooked, not me. But my favorite dish is not necessary to cook. Oysters are good in themselves.

I can easily eat a couple dozen.

But I still had a connection with the “world of Anton Pavlovich”. Friends often call me MaPa.
