Cranberry Recipes — Cranberry Tartlets, Cranberry Mousse, Chocolate Fondant with Cranberry Sauce, Pork Cutlet with Cranberries

The dough can be any — ready, flaky, shortbread or yeast, bought in a store or cooked at home. The easiest option is to make a cake with cranberries chopped unleavened dough.

It is also suitable for baking small tartlets, which can be effectively served to guests as a snack.

Hyou need:
For the test:

  • 150 g cold butter (or margarine)
  • 200 g flour
  • ¼ tsp salt
  • 2 tbsp. l cold water or milk
  • 1 tbsp. fresh cranberries
  • a handful of ground nuts (walnuts or pecans)
  • 4 tbsp. l Sahara
  • 1 egg for lubrication

What to do:
Add butter, flour, and salt into a deep bowl and mix with a mixer (or blender) to make crumbs, add water or milk, and then collect the dough in a bowl with your hands.

Form a dough with a thickness of 5-6 cm from the dough, wrap it in plastic wrap and put it in the refrigerator for 30-40 minutes.

In the meantime, prepare the berries.

Cranberries Wash thoroughly, sort out, put in a container, add sugar, nuts and mix.

Preheat oven to 170-180 ° C.

Put the cooled dough on a work surface and cut into 10-14 pieces across.

Roll each piece individually with a rolling pin into a small flat cake about 0.5 cm thick.

Top the dough on a tart tray upside down and cut the dough around the edges of the form.

Put the cut dough into shape, put the remaining dough off.

When all forms are filled with dough, combine the remaining trim, roll it into a layer. Take any form for cookies (for example, «asterisk») and cut out from the remaining dough for the tartlets. In each form with dough lay out cranberry the filling, and the top cover with dough, cut in the form of «stars».

Put tartlets on a baking sheet, brush with egg on top.

Bake in the oven for about 20 minutes.

If you add balsamic vinegar to a sweet cranberry sauce and a little hot pepper you get a wonderful sauce for steaks, meatballs and fish cooked on the grill.

What do you need:

  • 2 pork chops on the bone
  • 3 tbsp. l soy sauce
  • 1 tbsp. l olive oil
  • mix of freshly ground pepper
  • pair of dried thyme
  • 1/2 cup cranberries (fresh or frozen)
  • 1/3 cup brown sugar
  • 100 ml of water
  • 100 ml of dry red wine
  • 1 tbsp. balsamic vinegar
  • 1/4 hot red pepper (chilli)
  • salt to taste

What to do:
Marinate meat for 30-60 minutes in a mixture of soy sauce, olive oil and spices. To cook cranberry sauce.

Cranberries with sugar put in a saucepan, add water, bring to a boil and cook for 10 minutes.

Then add the remaining ingredients (wine, vinegar, pepper and salt) and heat the mixture in half — about 30 minutes.

If there is no time to wait, you can add a thickener (starch or a little flour and cook until thick).

When the sauce is ready, remove the pepper and discard.

Fry meat under the grill until ready, for 20-30 minutes (depending on the type of grill and the size of the pieces).

Put on a dish, pour cranberry the sauce.

Serve with country-style potatoes.

At the end of cooking add sugar, mix, and when it is completely dissolved, remove the saucepan from the stove and cool to room temperature.

Then pour the chilled cranberry juice and beat the mixture until it doubles in volume.

Pay attention that the colder the mixture is, the easier it will be whipped and the air will turn out. To do this, you can immerse the container with the mixture in another, slightly larger in size, filled with ice water.

My advice: after beating, cool the mixture for an additional 30 minutes in the freezer.

Transfer the cooled mixture to a pastry syringe and fill the ice cream bowls with it. If you do not have a pastry syringe, use a spoon, but in this case, the weight will be less air. Put the cream with mousse in the refrigerator for 30-40 minutes.

Serve the mousse chilled.

Fondant au chocolat — french melting chocolate dessert, we suggest cooking it with cranberry the sauce!

  • some water (if the berries are fresh)
  • mint leaves and a few blueberry berries for decoration

What to do:
To cook cranberry sauce. Cranberries wash, sort and set aside a handful of berries for decoration. The main part of the berries folded in a saucepan, add sugar to taste, salt and pour a little water (so that it covers the berries).

Put the saucepan on the lowest fire and cook for 10 minutes.

Boil the berries slightly cool, then punch in a blender to a state of smooth mashed potatoes, and refrigerate.

Preheat oven to 210 ° C.

Cook the dough. Melt chocolate in a water bath. In a separate bowl, melt the butter, then beat it with sugar, add the egg and mix, then add the melted chocolate to the mixture and mix again thoroughly.

Gradually stir in the flour.

Prepare molds, richly smeared with oil and sprinkled with flour or cocoa powder.

Each mold is first half filled with chocolate mixture, then put a few berries cranberries and top with the remaining chocolate mixture.

Bake for about 10-15 minutes in a preheated oven.

If you want to get a liquid center, 10 minutes is enough.

Remove ready-made fondants from the molds onto a dessert plate, sprinkle with powdered sugar on top, decorate with berries, mint leaves and pour cranberry the sauce.

Serve fondant warm.

The smoothies of the right consistency are moderately dense and satisfying — this is a great option for a morning breakfast or an evening snack.

What do you need:

  • 1,5 glasses cranberries (fresh or frozen, however, lingonberries will do)
  • 1 banana
  • 2 cups cold water
  • 2 tbsp. l instant oatmeal or cereal flakes
  • sugar or honey to taste

What to do:
In the bowl of the blender, add all the ingredients for a smoothie and beat them for 2-3 minutes.

If you exclude flakes, and water is replaced by milk, you get a healthy milkshake, which children will certainly appreciate.
