The process of making the filling is as follows: I soften the cheese with a mixer, add whipped cream, a little vanilla and lemon juice.

What do you need:

  • 140 g butter at room temperature
  • 250 g crackers
  • 300 g of Philadelphia cheese at room temperature
  • 250 ml whipping cream
  • 60 g of powdered sugar
  • 1 tsp vanilla extract (can be replaced with vanilla sugar)
  • 1/5 tbsp. l lemon juice
  • strawberry for decoration

What to do:
Turn crackers into crumb.

The easiest way to do this in a food processor.

Before putting crackers in it, break them.

Cut the butter into small cubes, add to the crumb and punch with a mixer.

The result should be loose creamy crumb.

In a detachable form with a diameter of about 23 cm and a height of about 5 cm, pour loose crumb and distribute along the bottom and walls, with a good tamping with your fingers.

Put in the freezer for at least 10 minutes.

Cheese «Philadelphia», powdered sugar, vanilla extract and lemon juice put in the bowl of the mixer and mix using a spatula-shaped nozzle, or simply a silicone spatula. You should get a homogeneous mass of consistency of thick cream.

Add cream and mix gently again at low speed.

Fill the cake with a filling, level with a silicone spatula, cover with cling film and put in the refrigerator for at least 3 hours.

Serve with fresh strawberries!
