How to cook classic Spanish meat paella?

Paella meat with the addition of pumpkin — One of the most famous dishes of Spanish cuisine. The basis of any paella is rice, which is fried and stewed, as a rule, in large pans with the addition of olive oil and other various ingredients.

With what they do not combine the Spanish paella: this is a different meat, chicken, various fish, other seafood, vegetables, and almost all of these components can be present in one paella.

Due to such an abundance of components, paella quite hearty and far from dietary dish. However, do not miss the opportunity to pamper yourself at times, having prepared a real paella at home. Moreover, the meat paella with pumpkin is an excellent vitamin version of a traditional Spanish dish.


  • Polished round grain rice
    (200g)

  • Pork neck
    (450g)

  • Onion
    (100g)

  • Carrot
    (100g)

  • Celery root
    (100g)

  • Pumpkin
    (150g)

  • Garlic
    (5 teeth)

  • Sea salt
    (1/2 tsp)

  • Ground black pepper
    (1/2 tsp)

The first step is to cut the meat into medium, slightly oblong pieces. Next, put it on a preheated pan and fry over high heat for a few minutes with a little olive oil.

Then, the previously washed and peeled onions and celery must be cut into small strips.

After that, you need to clean the garlic, take the washed and peeled carrots and grate it on a medium grater. Put the meat from the pan and fry in it all the prepared ingredients, including onions, celery, garlic and carrots.

Next, you need to take a pumpkin, peel it and cut into medium rectangular slices. Put the pumpkin in the pan to the other components. Continue to roast on moderate heat for a few more minutes.

Now you need to wash the rice and, together with the already roasted meat, add to our pan. Then you need all the ingredients to mix well and add salt and pepper to taste.

Then hot water should be poured into the pan until it is almost completely covered with rice and, covered with a lid, simmer paella on low heat for 15-20 minutes. After the rice is ready, it is necessary to remove the lid and still hold over high heat for 5 minutes until a crust forms under our paella.

Meat paella with pumpkin ready for serving! Beforehand it can be decorated with a small amount of fresh greens.
